Vegetable Chili or Sloppy Joe Nachos on Bell Peppers

Ingredients

  • 1 packet of Transition Sloppy Joe or Vegetable Chili
  • 1 medium sized bell pepper
  • 2 tbsp of salsa (Newman’s Own Mild Salsa)
  • 2 tbsp of fat free shredded cheese

Instructions

  1. Preheat the oven to 375℉.
  2. Prepare the Transition Sloppy Joe or Vegetable Chili packet according to the instructions on the package.
  3. Clean and dry one medium sized bell pepper.
  4. Start by removing the core of the pepper. Once the core is removed and you have cleaned out all of the seeds, slice the bell pepper into 6 even strips and place on a baking sheet.
  5. Spoon the Sloppy Joe or Vegetable chili over the slices of bell pepper.
  6. Sprinkle with 2 tbsp of fat free shredded cheese.
  7. Bake the bell pepper nachos at 375℉ until the cheese is melted – about 10 minutes.
  8. Once the cheese is melted, remove the bell pepper nachos from the oven and put onto a plate. You can add 2 tbsp of salsa and fresh cilantro then enjoy.
