Vegetable Chili or Sloppy Joe stuffed Peppers

Ingredients

  • 1 Transition sloppy joe or vegetable chili packet
  • ½ cup frozen cauliflower
  • ¼ cup sugar free tomato sauce (i.e. Hunts)
  • 1 raw bell pepper
  • 2 Tbsp low fat mozzarella or parmesan cheese
  • salt and pepper to taste

Instructions

  1. Steam peppers to desired texture and allow them to cool.
  2. Prepare the Transition Sloppy Joe packet or Vegetable Chili packet as directed.
  3. Microwave cauliflower rice per the instructions on the package.
  4. Mix together the sloppy joe or vegetable chili mixture, cauliflower rice, tomato sauce, and salt and pepper to taste.
  5. Stuffed the cool steamed pepper with the mixture and top with cheese.
  6. Cook at 400°F until hot and the cheese is melted.
