Vegetable Chili or Sloppy Joe stuffed Peppers

Ingredients
- 1 Transition sloppy joe or vegetable chili packet
- ½ cup frozen cauliflower
- ¼ cup sugar free tomato sauce (i.e. Hunts)
- 1 raw bell pepper
- 2 Tbsp low fat mozzarella or parmesan cheese
- salt and pepper to taste
Instructions
- Steam peppers to desired texture and allow them to cool.
- Prepare the Transition Sloppy Joe packet or Vegetable Chili packet as directed.
- Microwave cauliflower rice per the instructions on the package.
- Mix together the sloppy joe or vegetable chili mixture, cauliflower rice, tomato sauce, and salt and pepper to taste.
- Stuffed the cool steamed pepper with the mixture and top with cheese.
- Cook at 400°F until hot and the cheese is melted.
