Vegetable Chili or Sloppy Joe Nachos on Bell Peppers

Ingredients
- 1 packet of Transition Sloppy Joe or Vegetable Chili
- 1 medium sized bell pepper
- 2 tbsp of salsa (Newman’s Own Mild Salsa)
- 2 tbsp of fat free shredded cheese
Instructions
- Preheat the oven to 375℉.
- Prepare the Transition Sloppy Joe or Vegetable Chili packet according to the instructions on the package.
- Clean and dry one medium sized bell pepper.
- Start by removing the core of the pepper. Once the core is removed and you have cleaned out all of the seeds, slice the bell pepper into 6 even strips and place on a baking sheet.
- Spoon the Sloppy Joe or Vegetable chili over the slices of bell pepper.
- Sprinkle with 2 tbsp of fat free shredded cheese.
- Bake the bell pepper nachos at 375℉ until the cheese is melted – about 10 minutes.
- Once the cheese is melted, remove the bell pepper nachos from the oven and put onto a plate. You can add 2 tbsp of salsa and fresh cilantro then enjoy.
