Sushi Salmon Rolls

Ingredients
- 1 packet of Chicken of the Sea Pink Salmon (70 calories)
- 4-8 slices of cucumber (apx 10-15 calories)
- 1 tbsp plain greek yogurt (apx 10-15 calories)
- ¼ cup shredded carrot (apx 10 calories)
- 2 tsp sriracha (apx 20 calories)
- 2 tbsp low sodium soy sauce (apx 20 calories)
Instructions
- Using a vegetable peeler, peel the skin off of your cucumber. Once the skin is removed, use the peeler to make 4-8 thin slices of cucumbers. Lay those on a paper towel to absorb some moisture.
- Combine the 1 tbsp of plain greek yogurt and 2 tsp sriracha in a bowl and mix together.
- Spread the greek yogurt and sriracha onto the thin slices of cucumber.
- Lastly, add a few spoonfuls of salmon from the packet and a pinch of shredded carrot onto each slide of cucumber and gently roll each one individually.
- Optional – you can dip the sushi rolls into 2 tbsp of low sodium soy sauce to add some extra flavor
