Sheet Pan Steak or Chicken Fajitas

Ingredients

  • Half a bag or 3 oz of John Soules chicken (110 calories) or steak strips (120 calories)
  • ½ cup of bell pepper (20 calories)
  • ¼ cup yellow onion (17 calories)
  • ½ cup chopped mushrooms (15 calories)

Instructions

  1. Line a sheet pan with aluminum foil and preheat the oven to 400℉
  2. Chop your bell pepper, mushrooms, and onions.
  3. Use a small amount of spray oil to coat the vegetables. Feel free to add a small amount of seasonings to add a little extra flavor to the vegetables. You can sprinkle on cumin, paprika, garlic powder, black pepper, onion powder, and cayenne pepper.
  4. Stick the vegetables in the oven and allow them to roast for approximately 20 minutes.
  5. Once partially roasted, take the baking sheet of vegetables out of the oven and add in half of the bag of chicken or steak and toss with the vegetables.
  6. Put the baking sheet back into the oven until the chicken warms through and the vegetables are roasted to your liking. (The chicken and steak strips are already cooked)
  7. Remove from the oven and enjoy as is or over a serving of cauliflower rice (25 calories per 1 cup serving)
