Beef Fried Rice Recipe
If you’d like to switch things up in place of a dinner entree, here is a delicious recipe from Cheryl that is high in protein and low in carbs.
Beef Fried Rice

Ingredients:
1 Tbsp avocado oil
1 ½ lb lean ground beef, thawed
1 large head of cauliflower, riced
3 large eggs
1 tsp + ¼ cup soy sauce, low sodium if needed
3 cloves of garlic, minced
1 tsp ginger powder
3-4 green onions, cut into small discs
hot sauce, pepper paste or crushed red pepper to taste
optional add ins: broccoli, pea pods, mushrooms
Directions:
- In a large saucepan, add beef and brown. Stir occasionally with a wooden spoon.
- While beef is browning, rice the cauliflower by hand, use a food processor or purchase it already riced from the grocery store (frozen or fresh).
- In a small bowl, beat eggs with 1 tsp soy sauce.
- Heat 1 Tbsp of oil in a separate pan and cook eggs as a round sheet (like and omelet) on both sides. Cut into strips and set aside.
- When beef is done browning, add in garlic, ginger, soy sauce and cauliflower.
- Stir until well combined, cover and cook on medium heat until the cauliflower is soft, about 7-8 minutes.
- Remove cover and increase heat slightly. Add green onions, eggs, and hot sauce. Fry until remaining liquid is gone, about 5 minutes. Serve and enjoy!
