Zucchini Noodles with Chive Cottage Cheese

Ingredients

  • 1 cup of frozen zucchini noodles (Green Giant Veggie Spirals 30 calories)
  • 1 container of chive cottage cheese (5.3 oz 150 calories)

Instructions

*It is best to cook the zucchini noodles in a covered skillet and then drain the water prior to cooking to avoid extra moisture*

  1. Remove zucchini noodles from the freezer and measure out 1 cup.
  2. Use a small amount of spray oil to grease the skillet. Place 1 cup of frozen zucchini noodles in a covered heated skillet and cook for approximately 5 minutes.
  3. If needed, remove zucchini noodles from the skillet and pat dry with a paper towel to absorb extra moisture and place zucchini noodles back in the warm skillet.
  4. Lastly, mix in the serving of cottage cheese and stir into the zucchini noodles. Allow the cottage cheese to slightly melt. Add salt and pepper to taste.
  5. Serve and enjoy!
