Chicken Kabobs

Ingredients

  • 1 Perdue chicken breast
  • ¼ cup mushrooms
  • ¼ cup red bell pepper
  • ¼ cup yellow onion (Can substitute for summer squash or zucchini)

Instructions

  1. Chop up ¼ cup each of mushrooms, red bell pepper, and yellow onions into 1 inch chunks. You will use approximately 2 chunks of vegetables per skewer.
  2. Season the chopped vegetables with lemon juice and oregano, parsley, and thyme for some extra flavor.
  3. Cut the chicken into 1 inch pieces
  4. Soak wooden skewers in water for 20 minutes before threading
  5. Thread each skewer with 2 pieces of chicken and a few chunks of vegetables
  6. Line a baking sheet with aluminum foil. Allow plenty of space between the chicken and vegetables on the skewers
  7. Bake the skewers in the oven at 350℉ for 20-25 minutes. Bake until the chicken is fully cooked and has an internal temperature of 165℉. Oven temperatures and cooking times may vary.
