Tuna Cucumber Boats

Ingredients
- One packet of tuna (flavored or unflavored 70 calories)
- One english cucumber (30 calories)
- 1 tbsp diced purple onion
- 2 tbsp diced celery
Instructions
- Clean and wash your cucumber. Slice the cucumber straight down the middle lengthwise.
- Use a spoon and gently scoop out the seeds. The seeds will not be needed and can be thrown away.
- Dice up 1 tbsp of yellow onion and 2 tbsp of celery for a little extra flavor and crunch.
- In a bowl combine the tuna packet with 1 tbsp of diced onion and 2 tbsp of celery.
- Mix together and scoop the tuna into each half of the cucumber. Add a little salt and pepper to taste as needed.
