Tuna Cucumber Boats

Ingredients

  • One packet of tuna (flavored or unflavored 70 calories)
  • One english cucumber (30 calories)
  • 1 tbsp diced purple onion
  • 2 tbsp diced celery

Instructions

  1. Clean and wash your cucumber. Slice the cucumber straight down the middle lengthwise.
  2. Use a spoon and gently scoop out the seeds. The seeds will not be needed and can be thrown away.
  3. Dice up 1 tbsp of yellow onion and 2 tbsp of celery for a little extra flavor and crunch.
  4. In a bowl combine the tuna packet with 1 tbsp of diced onion and 2 tbsp of celery.
  5. Mix together and scoop the tuna into each half of the cucumber. Add a little salt and pepper to taste as needed.
